Pasta is always identified with Italy. While some think the idea came from Marco Polo's trip to China, pasta was a staple of the Italian table long before that. It derives from ancient Greek and Arabic recipes for dough cakes - the word pasta itself simply means "dough". The best pasta is made with flour milled from the hard, translucent and nutrient-rich Triticum durum wheat. Competition between the huge pasta firms during the Renaissance is what bought about the huge variety of forms we have today.

Spaghetti, also called vermicelli in the south of Italy, this most popular form of pasta means "little strings" in Italian.

Fusilli is short lengths of flat pasta that have been twisted into a spiral corkscrew shape.

Fettuccini, long flat strips of pasta usually no more than ¼ in. wide.
